Breakfast: Cream Cheese Pancakes

Pancakes are a breakfast staple, cream cheese pancakes are a unique variation on regular pancakes. A healthy, nutritious breakfast should be packed with protein and carbs so that you start your day feeling awake and energetic. Fortunately, your family probably won’t even be able to tell the differ-ence with these simple alternatives to traditional pancakes.


To whip up a batch of four of these delicious pancakes, you’ll need just a few simple ingredients. This includes two eggs, two tablespoons of cream cheese, a tablespoon of sour cream, a tablespoon of sugar substitute, and a pinch of cinnamon.

The Process

Start by heating a small skillet over medium heat. Then, in a large bowl, combine the cream cheese, eggs, sour cream, sugar substitute, and cinnamon. You can add as much or as little of the cinnamon as you desire, but about a teaspoon is usually enough to yield a flavor that’s similar to French toast. If your family doesn’t like cinnamon, you can leave this ingredient out without affecting the consistency of the pancakes at all.

When mixing the ingredients, it’s best to use a electronic hand mixer, if you have one. If not, it may take a little bit longer to blend the ingredients with a fork or whisk. After the ingredients are com-bined to form a thick batter, allow it to sit in the bowl for a minute to allow any air bubbles to dissi-pate.

Pour a thin layer of olive oil over your heated skillet before pouring 1/4th of the batter into it, flip-ping with a spatula after a minute or two. Your pancake is done when the edges are golden brown. You can serve these up with whipped cream, fresh fruit, peanut butter, or your favorite sugar-free syrup.
