Dinner: Cajun Chicken Pasta
If you are looking for a healthy dinner with a little bit of a kick then Cajun Chicken Pasta is for you!
Like all the other recipes you’ll find on this site, this dish requires just a few ingredients–many (or all) of which you may already have on hand. These ingredients include three skinless, boneless chicken breasts, a teaspoon of minced garlic, a tablespoon of butter or margarine, a pinch of salt and pepper, Cajun seasoning to taste (usually about a tablespoon is enough), a cup of heavy whipping cream, a cup of fresh grated parmesan cheese, and a box of your favorite pasta (linguine is a good choice here).
Once you’ve got all your ingredients together, start by placing a medium skillet on medium-high heat. Next, place your thawed chicken breasts on a cutting board, trim the fat, and chop them into bite-sized pieces. Place the chopped chicken into a bowl and add salt, pepper, Cajun seasoning, and garlic before tossing so that the chicken is evenly coated.
Add a tablespoon of butter to your heated skillet. Once it’s melted, add the coated chicken and cook until no longer pink in the middle (usually around 6-7 minutes). If you like your food spicier, now is also a good time to add some more Cajun seasoning. While chicken is cooking, boil noodles until al dente (about 10-11 minutes).
Once the chicken is cooked, slowly add a cup of heavy whipping cream and a cup of parmesan cheese. Heat to a boil, then reduce heat to allow the sauce to thicken. If you have a hard time getting the sauce to thicken, add more cheese until it reaches the desired consistency. Pour chicken and sauce over bed of noodles and serve with steamed broccoli and cauliflower for a yummy dinner. Substitute spaghetti squash for traditional pasta to transform this into a veggie friendly dish!
